1 Tbs maple syrup
1 tsp salt

1 c uncooked quinoa
1 c cooked chickpeas
6 c collard greens, stems removed
- Heat oil in a large soup pot and add paprika, cumin, chili powder, carrots and just a little bit of water.
- Stir, cover and cook for about 10 minutes. Stir occasionally.
- Add all remaining ingredients and about 10 cups of water to the pot.
- Cover and bring to a boil.
- Lower heat to medium and simmer uncovered for at least 30 minutes.
